This Superfood Trio Will Knock Your Socks Off

This is one of my go-to recipes because it is great anytime of the day! This superfood trio in 1 easy to prepare meal will make a fabulously tasting, healthy snack or dish you will surely make often.

I have to admit, as much as I love avocados, it took me a while to actually try this. The thought of egg with avocado didn’t appeal to me as quickly as it may for some of you. If you haven’t had the two together yet, trust me and go out on a limb to try this…and soon!

If that doesn’t get you making your list for the grocery store yet, knowing what makes these foods a superfood will have you grabbing your keys.

 

 


Superfood #1 : Whole Wheat BreadSuperfoods

  • Fiber – leaves you feeling full longer, decreases LDL (bad cholesterol)
  • Protein – harder the bread, more protein
  • Carbohydrates (complex) – don’t fear these, they help you in your weight loss efforts
  • Wheat germ – Vitamin E & folate for a healthy heart, Omega 3s to lower cholesterol & blood pressure, contributes for brain function

Superfood #2 : AvocadoSuperfoods

  • 20 different vitamins & minerals
  • Potassium – higher than a banana!
  • Unsaturated Fat (the good kind) – oleic acid (heart healthy fat), fiber, increases HDL (good cholesterol), lowers LDL (bad cholesterol)

  • Protein – about 6 grams per egg

Avocado & Egg Toast

1 slice whole grain bread, toasted
1/4 Haas avocado, mashed
1 large egg
Cooking Spray
salt & pepper to taste

Mash the avocado, salt & pepper. Toast the bread. Spray frying pan with cooking spray to coat. Cook egg according to your desired preference. Spread avocado on toast. Place cooked egg on top. Season with salt & pepper as desired.
