Oh yes. It’s the oatmeal bar that tastes so good it can’t be healthy for you but it is healthy oatmeal bar.

I saw this recipe on Fitnessista and just had to give it a try because it looked so good. This is easy and quick to whip up. I made this in a few minutes that I had before our next baseball game. Which, as you can see, it was a bit cold that evening.

This Pumpkin Cranberry Oatmeal Bar is so yummy it’s like you’re having dessert for breakfast – if you choose to eat it for breakfast. I have been snacking on it all day – it is one of those things you just have to have a little bite every time you walk by. Apparently, I am not the only one in the family that thinks so, because it is disappearing fast!

I also love that this recipe is so versatile. Instead of cranberries, you can add raisins. You can also add in pecans or almonds also.

Pumpkin Cranberry Oatmeal Bar

2 cups Oats
1 Tablespoon cinnamon
1/2 teas pumpkin spice
pinch salt
1/2 teas baking powder
2 tablespoon coconut oil
1 1/3 cup almond milk
1 mashed banana
1/4 cup coconut sugar
1/2 cup dried cranberries
1/2 cup pumpkin

Preheat the oven to 350 degrees. Mix all of the ingredients together in one bowl. Pour into a baking dish. Bake for 20-25 min or until the oatmeal is browned and set.

It is a great comfort snack or breakfast paired with a cup of your favorite hot chocolate!
